Yummy, low fat casserole. Add parmasean for a heartier tast, serve with corn or lima beans.

Recipe Ingredients for Chicken and Grits Casserole

1 1/2 cups fat free milk
1/2 cup chicken broth
3/4 cup grits
1/8 teaspoon salt
1 tablespoon butter
2 ounces low fat cream cheese
1/2 tablespoons lemon juice
1 pound chicken breast

Recipe Directions for Chicken and Grits Casserole

  1. Preheat oven to 375

  2. Combine Milk and broth, bring to a boil.

  3. Gradually add grits and salt, stirring constantly with a wisk. Cook 5 minutes or until thick, stirring constantly. Remove from heat. Stir in butter and cream cheese. Stir in remaining ingredients.

  4. Spoon mixture into baking dish coated with cooking spray.

  5. Bake at 375 for 25 minutes or until set.
