Spatchcocked Chicken Grilled with BBQ Dry Rub

Recipe Ingredients for Chicken Grilled Whole

3 1/2 units (yield from 3.5 lbs) poultry

For basting:
2 tbsp lemon juice
1/2 cup chicken broth
1 tbsp olive oil

For the dry rub:
1 tbsp brown sugar
2 tbsp paprika
1 tbsp chili powder
1 1/2 tsp cayenne
1 1/2 tsp cumin
1/8 tsp allspice
1/8 tsp cloves
1 tbsp salt
1 tbsp cracked black pepper

Recipe Directions for Chicken Grilled Whole

  1. Remove the chicken's backbone with kitchen shears and open the body, pressing towards the cutting surface. Make a small incision below the keel bone and run fingers up each side of the bone to loosen and remove.

  2. Combine dry rub spices and rub all over the inside and outside of the chicken.

  3. Preheat charcoal or gas grill to medium-high heat, or 375. Place chicken breast-side down, and grill, turning every 15 minutes or so, for about 50-60 minutes, basting with each turn.

  4. Remove from grill and let rest 10 minutes before carving.
