A leaf lettuce salad with plenty of great texture and lots of protein. Use a vinaigrette you really enjoy (or make your own).

Recipe Ingredients for Chicken Green Salad

1 c lettuce, looseleaf torn
1 carrot, grated
3 mushrooms, sliced
1/4 avocado, cubed
1/2 chicken breast, cubed
1 T vinaigrette

Recipe Directions for Chicken Green Salad

  1. Rinse and dry lettuce and tear into bite sized pieces, place in a medium sized bowl.

  2. Add grated carrot, sliced mushrooms (I prefer crimini), 1/4 of avocado, and cubed chicken.

  3. Pour on vinaigrette and toss to coat. Eat promptly.

  4. If wanting the salad to go, place the vinaigrette in a small bottle and dress just before eating. This way the lettuce will not get too soggy.
