Recipe Ingredients for Chicken & Green Bean Casserole

2 tablespoons olive oil
1 pound green beans
2 cups mushrooms, sliced
2 cups chicken, boneless, skinless, breast halves, cooked
1 can cream of mushroom soup
2/3 cup skim milk
1/4 t black pepper
1 cup shredded cheese
1/4 cup bread crumbs

Recipe Directions for Chicken & Green Bean Casserole

  1. Preheat oven to 350 degrees.

  2. Cook chicken in oil over medium-high heat & set aside.

  3. Place green beans in bottom of 10x10 baking dish.

  4. Layer sliced mushrooms.

  5. Mix together milk, soup, & pepper, pour half of mixture over vegetables.

  6. Top with cooked chicken (shred if desired) & remaining soup mixture.

  7. Add shredded cheese & bread crumbs.

  8. Bake uncovered for 40 minutes.

  9. Serve over brown rice.
