Recipe Ingredients for Chicken gravy

300 ml chicken stock
100 g onion
75 g carrots
30 ml chicken fat
1 tbsp plain flour
1 tsp thyme

Recipe Directions for Chicken gravy

  1. The ingredients are a rough approximation of the chicken juices with skimming all the fat you can from the top, and smushing veg cooked alongside the chicken into the gravy.

  2. Roast a chicken :)

  3. Remove the chicken to rest under foil and skim all the fat possible from the leftover juices.

  4. Bring the roasting pan juices to a simmer and mash up the veg roasted alongside the chicken.

  5. Add the flour and simmer for a couple of minutes.

  6. Strain the gravy through a sieve and transfer with a spring of thyme to a pan to thicken.
