Tender chicken thighs in a fragrant sauce, complimented by sweet fruit flavours.

Recipe Ingredients for Chicken with Grapes & Apricot

1 tbsp Honey, Strained Or Extracted
2 tsp Ginger Root
1 tsp Cinnamon, Ground
2 clove Garlic
100 grams 100% White Grape Juice
8 thigh, bone and skin removed Chicken, Thigh, Meat Only
1 1tsp Olive Oil
1 large Onions
150 grams Red Seedless Grapes
100 grams Apricots, Dried, Sulfured, Uncooked
1 tsp Salt, Table

Recipe Directions for Chicken with Grapes & Apricot

  1. In a large bowl combine the honey, ginger, cinnamon, pepper and grape juice. Add the skinless chicken thighs and marinade for several hours or overnight.

  2. Heat the oil in a dutch oven or saute pan with a lid. Add the onions and garlic and saute till softened and golden. Add the drained chicken and brown on all sides. Season with salt and more pepper.

  3. Now add the chicken marinade and simmer on low heat for 20/30 minutes until the chicken is cooked through. The liquid should have reduced by half.

  4. Finally add the grapes and chopped dried apricots and simmer a further 5 minutes.

  5. Serve immediately with brown rice or wild rice (the nutty flavour goes well with the subtly sweet sauce) and top with more pepper and a sprinkling of sesame seeds if desired.
