Roasted chicken breast is served over fresh sauteed veggies and pasta.

Recipe Ingredients for Chicken Giardino

2 tbsp olive oil, divided
3 tbsp dried parsley, divided
1 garlic powder, to taste
1 salt, to taste
1 black pepper, to taste
1 crushed red pepper, to taste
1 medium onion, chopped
1 c. green bell pepper, chopped
1 c. red bell pepper, chopped
1 c. fresh broccoli, chopped
1 c. fresh asparagus, chopped
15 oz. diced tomatoes
1 lb. fresh chicken tenders
1/2 lb. pasta

Recipe Directions for Chicken Giardino

  1. Preheat oven to 425. Rinse and dry the chicken and place into a shallow roasting pan. In a small bowl, combine 1 Tbsp of oil with 1 Tbsp of parsley, garlic powder, salt, and pepper. Coat the chicken and cook at 425 for 10-12 minutes or until juices run clear.

  2. Cook pasta as directed on package.

  3. In a saute pan, heat 1 Tbsp. of olive oil. Add chopped onion and peppers. Season with salt, pepper, garlic, parsley, and crushed red peppers. Saute until veggies are softened slightly. Add broccoli and asparagus to the saute pan and cook until slightly softened. Add 15 oz. diced tomatoes and cover. Simmer until ready to serve.

  4. To Serve: Drain pasta and place into a bowl. Top with veggie mixture and then place chicken on top.
