Chicken Genovese from Italian Bistro

Recipe Ingredients for Chicken Genovese

20 ounces boneless skinless chicken breast
1 cup olive oil
32 ounces italian plum tomatoes
2 cups mushrooms
1 red pepper
1/2 cup pitted olives
3 tablespoons chopped basil
2 tablespoons chopped rosemary
2 teaspoons ground black pepper
1 teaspoon celery salt
2 tablespoons sugar
1/2 cup heavy cream

Recipe Directions for Chicken Genovese

  1. Directions

  2. In saucepan over medium heat, place cup olive oil.

  3. When hot, add mushrooms, shallots and red peppers.

  4. Cook for 3 to 4 minutes or until mushrooms start to soften.

  5. Turn to low heat.

  6. Crush plum tomatoes by hand and add.

  7. Stir thoroughly.

  8. Add basil, rosemary, black pepper, celery salt and sugar, and simmer for 15 minutes.

  9. Add Spanish olives.

  10. This sauce can be made ahead of time if desired.

  11. When ready to eat, cut chicken in thin strips, approximately l ounce.

  12. Lightly coat with flour and place in hot frying pan, over medium heat, containing cup olive oil.

  13. When chicken is golden brown, turn it over.

  14. Add prepared sauce to chicken and add cup heavy cream.

  15. Stir thoroughly.

  16. Serve Chicken Genovese over pasta or white rice.

  17. Top with grated cheese and fresh parsley, if desired.
