40 clove garlic done on the stovetop

Recipe Ingredients for Chicken and Garlic Stew

2 tbsp olive oil
20 cloves garlic
1/2 tsp cinnamon
1/2 cup fresh parsley, chopped
1/4 tsp salt
1/8 tsp pepper
3 pounds chicken, in pieces
1/2 cup water

Recipe Directions for Chicken and Garlic Stew

  1. Use 2 heads of garlic, separating into cloves, but do not peel.

  2. Rinse chicken and pat dry.

  3. Put oil, garlic, salt, pepper, parsley, and chicken in dutch oven or large sauce pan. Pour water over chicken and mix.

  4. Bring to a boil over medium-high heat. Cover, turn to low, and cook for 1 hour - undisturbed.

  5. Serve on a platter, garnished with more fresh parsley. Squeeze the garlic out of the skin, onto a piece of bread.
