Crock pot chicken with garlic, pepper and artichokes

Recipe Ingredients for Chicken with garlic, pepper and artichokes

2 lbs boneless skinless chicken breast
1 medium onion, chopped
1 red pepper, cut into thin strips
12 cloves garlic
12 oz artichokes
1 tbsp extra virgin olive oil
2 tsp rosemary, crushed
1 tsp black pepper
1/2 cup chicken stock or broth, 98% fat free
1 tbsp quick cooking tapioca
1 tsp lemon peel, finely grated
4 cups cooked brown rice

Recipe Directions for Chicken with garlic, pepper and artichokes

  1. Cook onions and garlic in olive oil over medium heat for about 5 minutes, until tender.

  2. Put all ingredients except chicken in crock pot.

  3. Place chicken on top. Spoon some of the garlic mixture on the chicken.

  4. Cook on low for 6 hours.
