Chicken & Fruit. One skillet meal.

Recipe Ingredients for Chicken & Fruit

1 lb chicken, cut into 1 inch pieces
1/4 large sweet onion
2 carrots
1/2 cup white wine
1 cup low-sodium chicken broth
1/2 cup dried apricots
1/8 cup dried cranberries, unsweeted (2 Tbsp)
14 1/2 oz chick peas, drained and rinsed (1 can)
1 tbsp canola oil

Recipe Directions for Chicken & Fruit

  1. In large skillet, fully cook chicken. Set aside.

  2. Add oil to skillet. When oil is hot, add onions and carrots. Cook until onion is translucent and carrots are starting to soften.

  3. Add wine, chicken broth, apricots, and cranberries to skillet. Drain and rinse chick peas and add to skillet.

  4. Season to taste with coriander, cumin, cinnamon, and nutmeg.

  5. Serve with rice (I usually cook the rice in chicken broth and add toasted almonds to the rice for this recipe, but that is strictly optional.)
