Recipe Ingredients for Chicken with fruit and olives

20 oz white meat chicken
1/2 cup prunes, diced
1/2 cup dried apricots, diced
1/2 cup olives, diced
1/4 cup vinegar
2 tbs oil
1 1/2 cups white wine
8 red potatoes, cubed

Recipe Directions for Chicken with fruit and olives

  1. Day 1

  2. marinate chicken in mixture of olives, prunes, apricots, 1 tbs oil and vinegar over night.

  3. Day 2

  4. Cube potatoes, toss with 1 tbs oil and bake in oven at 450 for 30 minutes, tossing once.

  5. Pour chicken mixture in baking pan sprayed with PAM. Pour wine over the chicken and bake for 45 minutes at 400 degrees.

  6. Remove chicken from oven and let cool for 15 minutes.

  7. Slice chicken and toss potatoes into the chicken and fruit mixture.

  8. Serve warm or room temp.
