Recipe Ingredients for Chicken Fried Steak

1/2 cup all-purpose flour, divided
2 large egg whites, lightly beaten
1/4 cup cornmeal
1/4 cup cornstarch
1 tsp smoked paprika
1/2 lb cube steak, lean, thinly sliced
1/2 tsp kosher salt
1/2 tsp ground pepper
2 tablespoons extra virgin olive oil

Recipe Directions for Chicken Fried Steak

  1. Preheat oven to 350 degrees. Coat a baking sheet with cooking spray.

  2. Place half the flour on a large plate. Place egg whites in a shallow dish. Whisk cornmeal, remaining flour, cornstarch and paprika in another shallow dish. Season both sides of steak with salt and pepper. Dredge each steak piece in the flour, shaking off excess; dip in the egg whites, then dredge in cornmeal mixture.

  3. Heat 1 tablespoon oil in large skillet over medium-high heat. Reduce heat to medium and add 2 pieces of steak; cook until browned on both sides, turning once, about 3-5 minutes total. Transfer steak to baking sheet and repeat with remaining tablespoon oil and 2 pieces steak. Transfer baking sheet to oven and bake until cooked through, about 10 minutes more.
