Recipe Ingredients for Chicken Fried Steak

3/4 lb. cube steak (trimmed excess fat; tenderized)
1/4 cup flour
1 egg white
1/8 cup canola oil (use what necessary:measure before/after)
1 cup chicken broth, divided
1/4 cup nonfat milk
1/2 teaspoon thyme
2 tbs cornstarch

Recipe Directions for Chicken Fried Steak

  1. Preheat oven to 250 degrees F.

  2. Season each piece on both sides with the salt and pepper. Place the flour, seasoned as you wish, into a pie pan. Place the egg whites into a separate pie pan. Dredge the meat on both sides in the flour, followed by the egg and finally in the flour again. Repeat with all the pieces of meat. I end up starting by dredging, then sprinkling meat with flour (thru a mesh strainer) until well coated.

  3. Place the meat onto a plate and allow it to sit for 10 to 15 minutes before cooking.

  4. Place enough of the vegetable oil to cover the bottom of cast iron skillet and set over medium-high heat; oil temperature should be between 350 and 375 degrees.

  5. Add the meat in batches, being careful not to overcrowd the pan.

  6. Cook each piece on both sides until golden brown, approximately 4 minutes per side. Remove the steaks to a wire rack set in a half sheet pan and place into the oven. Repeat until all of the meat is browned.

  7. Pour out ALL oil, saving browned bits on bottom. Blot pan of any remaining oil.

  8. Add thyme to pan and heat (low) and stir until you can smell the thyme.

  9. CAREFULLY add 3/4 cup broth; heat --DO NOT BOIL. Break/stir up the fond off bottom of pan.

  10. When heated thru, add milk and continue to heat.

  11. Mix 2 tbs. cornstarch dissolved in 1/4 cup broth. Add to pan and heat until thickened.

  12. Season gravy to taste. Serve the gravy over the steaks.
