Recipe Ingredients for Chicken Fried Rice with Vegetables, Chicken

3 cups brown rice, cooked
10 ounces frozen mixed vegetables (or 2 cups fresh, chopped vegetables)
1 small onion, finely chopped
1/2 cup eggbeaters, beaten
2 teaspoons olive oil
3 teaspoons low sodium soy sauce
12 ounces fresh chicken thighs, boiled an chopped
12 ounces fresh chicken breast, boiled and chopped

Recipe Directions for Chicken Fried Rice with Vegetables, Chicken

  1. In medium size non-stick pan, wipe with a little olive oil. Over medium heat pour in 1 1/2 cups brown rice and saute, stirring constantly until rice begins to pop. Bring rice and 3 1/4 cups water to a boil, stir once, then simmer for 45 minutes. Remove from heat and let sit 10 minutes, stir well. Let rice cool and refrigerate for 8 to 24 hours.

  2. In a large pan, heat 2 teaspoons olive oil no medium-high heat. Add onion and cooked rice. Stir and cook until onion is soft, about 5 minutes.

  3. Reduce heat to medium and add vegetables and chicken to rice mixture. Cook 2 minutes for frozen vegetables and 5-7 minutes for fresh vegetables.

  4. Spread the mixture out to the sides of the pan, leaving space in the middle for the eggs.

  5. Add the eggs, and scramble until cooked firm.

  6. Mix the eggs with the rice and vegetables, then sprinkle with soy sauce.
