A nice way to use leftover chicken and rice while incorporating vegetables into your diet! The whole family loves it.

Recipe Ingredients for Chicken Fried Rice

2 tbsp sesame oil
2 tbsp extra virgin olive oil
6 cups white rice, cooked and cooled
2 carrots, shredded
1 cup frozen peas
1 cup,+chopped green onions
4 eggs
1 cup chicken, cooked and finely chopped
1 tbsp soy sauce
1 tsp salt
1/4 tsp black pepper

Recipe Directions for Chicken Fried Rice

  1. Heat both oils over medium-high heat in a wok or large nonstick skillet.

  2. In a small bowl, beat eggs.

  3. Add rice to the oiled wok and stir until it loses its sticky texture. Stir in carrots and peas.

  4. Push rice mixture to the side of the pan and cook eggs on exposed pan surface. Slowly stir into rice mixture as the eggs cook.

  5. Stir in green onions, chicken (if desired), soy sauce, and salt and pepper. Continue cooking and stirring until chicken is heated through. Serve or cool and freeze in ziplock bags.
