Quick chicken fried rice with less oil.

Recipe Ingredients for Chicken fried rice

1 tbsp. canola oil
3 garlic cloves, chopped
3/4 tsp Crushed Red Pepper
8 oz. chicken breast meat, cubed
3/4 cup onion, chopped
1 cup chopped carrot
2 tbsp. chicken stock
2 cups cooked brown rice
2 cups cooked white rice
1 tbsp. sesame oil
4 tbsp. fish sauce
2 eggs
1/2 cup green peas

Recipe Directions for Chicken fried rice

In large skillet, cook garlic, red pepper in canola oil for 1 minute. Add chicken and cook 3-4 minutes if raw, 1 minute if cooked. Add onion, carrot, chicken stock and cook till carrot soft, about 4 minutes. Add cooked rice and heat through. Add sesame oil, fish sauce. Scoot all to sides and drop eggs in center; scramble and mix in with all. Add peas and cook 2 minutes or until slightly cooked.
