awesome substitute for pork fried rice

Recipe Ingredients for Chicken Fried Rice

4 egg whites
1/2 cups scallions chopped
2 cloves garlic
12 oz chicken breast raw
1/2 cups carrots, diced
2 cups cooked minute rice
1/2 cups frozen peas
3 tbsp low-sodium soy sauce

Recipe Directions for Chicken Fried Rice

  1. Coat large non stick skillet with cooking spray and set pan over medium heat. add egg whites and cook until scrambled, stirring frequently about 3-5 minutes remove from pan and set aside.

  2. recoat skillet with cooking spray and place over medium-high heat. Add scallions and garlic; saute 2 minutes. add chicken and carrotts saute until chicken is golden brown and cooked through about 5 minutes.

  3. stir in eggs, cooked rice, peas, soy sauce cook until heated through yields 1 cup per serving
