Recipe Ingredients for Chicken Fried Rice

1 tbls vegetable oil
4 oz chicken breast, boneless and skinless cut in 1/2-inch cubes
1 large egg
1/2 cup rice, cooked and cooled
1/4 cup peas, frozen and defrosted
1/4 tsp ground pepper
2 tsp soy sauce
1/2 cup iceberg lettuce

Recipe Directions for Chicken Fried Rice

  1. Heat oil in medium saucepan or wok to 350 degrees F. Add the chicken and stir fry, stirring once or twice for 1 or 2 minutes, or until the meat is almost cooked. Pour chicken in strainer and drain the oil.

  2. Return the oil drippings to the wok. Heat to 350 degrees F. Season the egg with salt and scramble in the wok for 30 seconds to 1 minute, then add the rice and peas. Stir-fry for 2 to 3 minutes to evenly combine the rice, eggs, and peas and to heat through.

  3. Add the chicken to this mixture. Add the soy sauce and lettuce and stir-fry for another minute, or until all ingredients are hot. Season again to taste. Transfer the rice to a platter and serve.
