This is a quick and easy way to satisfy a yen for Chinese food. The addition of lots of low calory Chinese vegetables bulk up a small amount of rice enough to satisfy.

Recipe Ingredients for Chicken Fried Rice

4 serving Dainty Chinese fried Rice
1 cup, chopped or diced(140 g) Chicken, Breast, Meat Only
1 Pack Bean Sprouts
1 bunch Broccoli
1/2 head raw Bok Choy
2 cup, pieces or slices Mushrooms
4 medium (4-1/8" long) Onions, Spring Or Scallions

Recipe Directions for Chicken Fried Rice

  1. In a wok or large teflon coated frypan, prepare box of Dainty Chinese Fried Rice (4 servings) according to directions.

  2. Add the scallions.

  3. Add the package of bean sprouts.

  4. In another coated frypan or wok,, combine 1 cup cooked, diced chicken breast, one head of brocolli, half a head of bok choy, and 2 cups mushrooms. Add 1/2 cup water and steam just until the brocolli turns bright green and the chicken will be warm.

  5. Fold the chicken & vegetable mixture into rice in the larger wok.

  6. Serve.

  7. Other vegetables can be added as long as you remember to add the extra calories to the meal. Almonds are a wonderful addition if your calorie allowance allows it. You must add those calories to your log! The spices that are already in the fried rice mix are adequate.
