A healthier version of the restaurant dish. I added chicken for some protein and made it into a meal (I think it was meant to be a side dish.)

Recipe Ingredients for Chicken Fried Rice (adapted from Hundry Girl)

2 cups Brown Rice - cooked and cooled to refrigerator temperature
2 cups frozen peas/carrots blend
1 cup fresh mushrooms, chopped
1/2 cup scallions, chopped
1 cup Egg Beaters
6 oz Chicken Breast - cooked and diced
1 envelope Fried Rice Seasoning (about 1 oz)
1 tbsp Low Sodium soy sauce
1/8 tsp garlic powder
1/8 tsp ground ginger

Recipe Directions for Chicken Fried Rice (adapted from Hundry Girl)

  1. Spray a large skillet with nonstick spray and cook Egg Beaters over medium heat - scrambling and breaking up into bite-sized bits with a spatula as it cooks. Remove from skillet and set aside.

  2. Add mushrooms and peas/carrots blend to skillet and cook until all are hot. Remove from skillet and set aside.

  3. Combine Fried Rice seasoning, garlic powder, ginger, and 3 tbsp warm water. Whisk until seasonings have disolved.

  4. Respray skillet with nonstick spray and add the cooled rice and the seasoning mixture. Stir togehter and heat over medium-high heat.

  5. Add the scallions, mushrooms, peas/carrots, egg bits, and chicken. Mix thoroughly until well heated. Continue to heat and stir until rice begins to crisp.
