Indian Cooking by Madhur Jaffrey p. 93 (modified to use less oil; original recipe uses 7 tbsp. and a mix of different chicken parts)

Recipe Ingredients for Chicken in a Fried Onion Sauce

2 tbsp. oil
4 large onions
6 cloves garlic
1 tbsp. fresh ginger
1 tbsp. ground coriander
1 tbsp. ground cumin
1/2 tsp. turmeric
1/2 tsp. cayenne pepper (or less), optional
350 g chicken breast (1 lb. raw weight)
4 tbsp. plain yogurt
2 1/2 cups water
1 cup tomatoes, skinned and chopped (or no-salt-added canned)
1/2 tsp. salt
1/2 tsp. garam masala
1/2 cup frozen peas

Recipe Directions for Chicken in a Fried Onion Sauce

  1. Cut chicken into bite sized pieces.

  2. Chop two of the onions very finely along with the ginger (1.5 inches if using a fresh piece) and garlic. (Ideally, they'd be pureed but my blender didn't co-operate.)

  3. Cut each of the other two onions in half lengthwise then slice very thinly.

  4. Heat the oil in a large pan over medium heat. Add the onion slices and fry until deep golden brown. Remove onions. (If using original amount of oil, leave as much as possible in the pan.)

  5. Put the onion/garlic/ginger paste in the same hot pan and fry until brown.

  6. Add the coriander, cumin, turmeric and cayenne pepper and stir once.

  7. Add yogurt one tablespoon at a time, stirring until incorporated.

  8. Add chicken and stir to mix. Cook until chicken looks mostly cooked or mixture starts to stick to the bottom of the pan.

  9. Add water, tomatoes and salt. Stir and bring to a simmer. Cover and cook over low heat for 20 minutes.

  10. Add garam masala and fried onion slices. Mix and cook uncovered over medium heat for about 10 minutes or until the sauce has reduced and thickened.

  11. If used original amount of oil, skim off fat.

  12. Serve sprinkled with a tablespoon of finely chopped fresh cilantro or parsley. Or as-is. :-)
