may use an assortment of exotic and cultivated mushrooms in this. serve with boiled rice, carrots, and baby corn. may substitute wine with sherry.

Recipe Ingredients for chicken fricassee

3 boneless chicken breasts, sliced
1 tbsp sunflower oil
4 tbsp butter
6 oz bacon, chopped
5 tbsp white wine
1 onion, chopped
5 c mushrooms, sliced
3 tbsp all-purpose flour
2 1/4 c chicken stock
2 tsp lemon juice
4 tbsp parsley, chopped

Recipe Directions for chicken fricassee

  1. season chicken with a little pepper. heat oil and half of butter in lge skillet or flameproof casserole and brown chicken and bacon pieces. transfer to dish and pour away excess fat. return skillet to heat and brown residue. pour in wine, stir w/wooden spoon to deglaze skillet, and pour liquid over chicken. wipe skillet clean.

  2. fry onion in remaining butter until golden brown. add mushrooms and cook, stirring frequently, for 6-8 minutes. reduce heat, stir in flour, and gradually add chicken stock, stirring to make a smooth sauce.

  3. add reserved chicken and bacon, together with wine juices and heat until simmering. simmer for 10-15 minutes, until chicken is cooked, then add lemon juice, parsley (reserve some parsley to scatter over rice), and seasoning. serve with plain boiled rice, carrots, and baby corn.
