Tasty, low calorie dish --can serve over rice

Recipe Ingredients for Chicken Fricasse

1 1/2 lbs boneless, skinless chicken breast
1 cup onions
5 1/2 cup Zucchini
1 1/2 cup green pepper
2 1/2 cup red bell peppers
28 oz canned crushed tomatoes
1 tbs extra virgin olive oil
1 tsp minced garlic
1 tsp paprika
1 tsp onion powder
2 tsp chicken bouillion
3/4 cup skim milk
2 tbs all purpose flour
3/4 cup fat free sour cream

Recipe Directions for Chicken Fricasse

  1. Brown chicken in 1/2 tbs oil & remove from pan

  2. Soften onions, peppers & Zuchinni in pan; about 10 mins

  3. Add Garlic, Paprika, onion powder and canned tomatoes. Stew for 10 mins.

  4. Mix milk, bouillion and flour in seperate pan over med heat, reduce and cook until thickened.

  5. Add thickening mixture and chicken back to vegtables.

  6. Cook until chicken is cooked through

  7. Add sour cream & serve
