A yummy family danish dish of chicken stew. Consists simply of chicken, peas, carrots, potatoes and alot of fresh parsley. So much parsley the stew turns a wonderful shade of green. Makes a GREAT St. Patricks Day meal !

Recipe Ingredients for Chicken Fricasee

1/4 cup chicken
1/4 cup frozen peas
1/4 cup sliced carrots
1 cup parsley, fresh
1 medium potato
1/4 tbsp cornstarch
1/4 tsp salt
1 tsp pepper

Recipe Directions for Chicken Fricasee

  1. Boil peeled potatoes in water, once cooked drain.

  2. Boil chicken thigh in separate pot with enough water to cover chicken.

  3. Once cooked take out chicken and remove the skin and bone. Put the meat back into same water.

  4. Add peas and carrots. (canned peas & carrots work too)

  5. Bring water to a boil, and thicken with cornstarch.

  6. Finely chop the parsley and add to pot. Measurement is an estimate. I buy one of the 'bunches' of parsley in the store and use as much as it takes to make the stew turn green. You just can't have too much parsley. Use the whole bunch it you want. The more parsley the better it tastes.

  7. Add Salt and pepper to taste. (Because I love salt so much I use the Sifto reduced-sodium salt, so I can add a lot more)

  8. You can add the cut cooked potato right to the stew, or you can pour the stew over potatoes on plate. Your choice.

  9. This actually tastes great on it's own or my husband likes it over toast.

  10. This recipe is measured out for 1 serving (only for the purpose of adding it to my calorie counter) But the truth is, I make an entire pot for the whole family. So you would have to increase all your ingredients per peice of chicken. Enjoy :)
