This is a little high on calories, but a very satisfying meal all by itself.

Recipe Ingredients for Chicken Florentine Rice Casserole

2 cups chicken broth
1 cup water
2 cups brown rice, instant
2 T. corn starch
1/4 c. olive oil
20 ounces chicken breast, boneless/skinless
1 t. thyme, dried
1 t. sage, dried
2 t. basil, dried
1 t. parsley, dried
1 t. marjoram, dried
1 medium onion, chopped
20 ounces spinach, frozen, chopped
2 cups low fat cottage cheese
1 salt and pepper to taste
1/2 cup parmesan cheese
1/4 cup butter

Recipe Directions for Chicken Florentine Rice Casserole

  1. Preheat oven to 350 degrees F.

  2. In a medium saucepan, boil the 2 cups of chicken broth.

  3. Stir in rice.

  4. Remove from heat and set aside.

  5. In a small bowl, mix cornstarch with 1 cup water.

  6. Heat olive oil in a medium skillet over medium heat.

  7. Place chicken in skillet with thyme, sage, bail, parsley and jarjoram.

  8. Cook until chicken is no longer pink and juices run clear.

  9. Drain and cube.

  10. Stir onion into the skillet and cook until browned and tender.

  11. In a large bowl, mix rice, cornstarch mixture, chicken, onions, spinach and cottage cheese.

  12. Transfer the mixture to a medium baking dish.

  13. Season with salt and pepper.

  14. Top with parmesan cheese and dot with butter.

  15. Bake covered for 45 minutes. Remove cover and continue baking for 15 minutes or until top is lightly brown.
