Recipe Ingredients for Chicken Florentine

1 tsp extra virgin olive oil
16 oz boneless skinless chicken breasts
4 oz crushed tomatoes
1 tsp oregano
1 tbsp basil
10 oz baby spinach
2 tbsp shredded parmesan cheese

Recipe Directions for Chicken Florentine

  1. in a large skillet over medium high, heat the oil and cook chicken until lightly browned on each side, approx 6 min.

  2. reduce het to medium and tir in tomatoes, oregno and basil; place spinach on top of the chicken and cover tightly.

  3. simmer, stirring occasionally, until chicken is cooked through, approx 15 min. stir in salt and pepper and top with cheese. serve with quinoa a l'orange salad.
