Recipe Ingredients for Chicken florentine

2 Serving Chicken
6 oz Spinach
1.67 tbsp Butter
1 tbsp chopped Shallots
1 slice (1 oz) Gruyere Cheese
4 oz Mushrooms
0.5 lemon yields Lemon Juice
2 oz Wine, Table, White
0.5 cup Soup, stock, chicken, home-prepared
0.5 cup, chopped Tomatoes, Red, Ripe
4 leaves Basil, Fresh

Recipe Directions for Chicken florentine

  1. pound chicken breasts lightly; sprinkle with ground pepper

  2. rinse and dry spinach

  3. heat 1/2 tbsp butter in skillet; add shallots and cook briefly; add spinach and pinch of nutmeg; cook, stirring until wilted and liquid is evaporated

  4. remove spinach from pan and allow to sool

  5. in center of each chicken breast place an equal portion of the spinach miscute and 2 tbsp shredded Gruyere

  6. fold sides and ends over filling; secure

  7. place chicken in steamer; when water boils, cover and steam for 5 minutes

  8. melt 1/2 tbsp butter in small sauce pan; add mushrooms, lemon juice and black pepper to taste and cook briefly

  9. add wine and stock and reduce liquid by half

  10. place in blender along with 1/2 tbsp butter and blend until fine; keep warm

  11. melt 1/2 tsp butter in saucepan and add chopped tomatoes; cook 1 minute.

  12. serve over chicken, garnished with basil leaves
