deglazed wine sauce more that adequately substitutes the traditional cream sauce, pareve margarine may offer a richer flavor but compete withthe vegetables

Recipe Ingredients for Chicken Florentine

1 T canola oil
12 oz chicken
1/2 c white wine
1 c onions
3 tsp garlic
2 c bell pepper
8 oz mushrooms
4 oz spinach

Recipe Directions for Chicken Florentine

  1. brown chicken in the oil

  2. deglaze with 1/4 c wine

  3. saute onions and garlic till softening

  4. add bell peppers and remaining wine

  5. when softening, add the mushrooms

  6. when these appear will cooked, add the spinach and cook till wilted

  7. adjust seasoning with basil, oregano, hot pepper, salt & pepper
