A healthy mixture of Brown rice and vegetables.

Recipe Ingredients for Chicken Flavored Brown Rice & Vegies

2 cups brown rice
1 cup mushrooms
2 tbsp olive oil
2 cups green beans
1 cup carrots
1 cup broccoli
4 cups chicken broth

Recipe Directions for Chicken Flavored Brown Rice & Vegies

  1. Add 2 tablespoons of olive oil to a cold teflon coated pan. Make sure the pan is large enough to accomodate the remaining ingredients.

  2. Place pan on medium heat.

  3. Cut mushrooms into cubes for easier frying.

  4. Add mushrooms to oil and cook until they are soft and start to brown.

  5. Add rice to pan and let remaining oil coat the rice. Heat the rice dry for a few minutes while stirring the mixture.

  6. Add chicken broth and bring mixture to boil.

  7. Place tight fitting lid on pan and simmer for 20 minutes on low heat.

  8. Cube carrots, slice green beans and prepare broccoli tips while rice is cooking.

  9. Stir mixture before adding carrots and green beans when time is up.

  10. Simmer again for 20 minutes. You may need to add another cup of water if no liquid is visible in the pan.

  11. Add broccoli replace lid and simmer for 10 minutes or intil rice is done and veggies are steamed.
