Delicious Mexican-style soup with plenty of veggies.

Recipe Ingredients for Chicken Fiesta Soup

1 lb. boneless skinless chicken breasts
14 1/2 oz stewed tomatoes - drained
8 oz chopped green chilies
28 oz red enchilada sauce
14 1/2 oz low sodium chicken broth
1 cup finely chopped onion
2 cloves garlic, minced
1 t. salt
1 t. ground cumin
1 t. chili powder
3/4 t. pepper
1/4 c. minced fresh cilantro
1 cup frozen whole kernel corn
1 yellow squash, diced
1 zucchini, diced
1 red pepper, diced
13 oz. black beans (optional)

Recipe Directions for Chicken Fiesta Soup

  1. Poach chicken breasts in simmering water for ~20 minutes. Check to ensure they are not pink inside. if they are, poach longer. This allows you to cook them without using any fat, as well as keeping them moist.

  2. Once cooled, shred chicken.

  3. Combine all ingredients in a crock pot, cover and cook on low for 8 hours. (Or just crank it up on high for 1/2 the time - just until everything is nice and hot).

  4. Serve with baked tortilla chips, shredded cheese, low or no-fat sour cream, jalapenos, chopped cilantro etc.

  5. NOTES:

  6. -Instead of chicken breasts you can use a whole rotisserie chicken, skin and fat removed and shredded. This adds a bit more flavor. If you do this, make sure you use one large enough to end up with 1-1.5 lbs of chicken (what a package of chicken breasts would weigh).

  7. - For the green chilies, I use one can green chilies, and one can (4 oz.) diced jalapeņos. Gives it a bit more kick!

  8. - Red enchilada sauce - I think I've used mild, but again, use spicier if you like it that way!

  9. - Some people I?ve given this recipe to like to skip the zucchini and squash b/c they?re not sure about it ? don?t skip them! They add nice color and flavor and this a good way to get awesome veggies into your diet!

  10. - I like adding a drained can of black beans, too (13 oz. ? whatever the small cans of black beans are). Some people are averse to beans, though, so I included nutritional info with and without beans below. They do add some calories ? but add less than a gram of fat and also about twice as much iron and calcium. With them it?s still under 500 calories for a serving.

  11. - I also tend to add hot sauce and cayenne ? we like things spicy!
