This is enough filling for only one calzone, when you follow the recipe for Calzoni Dough for a Crowd. Multiply as needed. Cut it into 5 pieces.

Recipe Ingredients for Chicken & Feta filling for Calzoni

2 oz chicken breast, thinly sliced
1 tsp olive oil
1 3/5 oz feta cheese, crumbled
1/2 tbsp parmesan cheese, shredded
1/2 tsp fresh rosemary, removed from stem
1/2 tsp fresh thyme leaves, removed from stem
1 tsp hoisin sauce
2 oz water
1/4 tsp honey
1 oz vinegar
1 tbsp lemon juice
2 tsp lime juice
1/2 tsp salt
1/2 tsp onion powder
1/2 tsp garlic powder

Recipe Directions for Chicken & Feta filling for Calzoni

  1. Mix last 9 ingredients together and pour over chicken slices, stirring to coat. Allow to marinate for at least 15 minutes. Saute chicken in a nonstick skillet with the oil. Set aside to cool.

  2. Place feta down center of prepared Calzoni for a Crowd recipe dough. Top with cooled cooked chicken. Sprinkle parmesan, rosemary and thyme on top.
