Recipe Ingredients for Chicken Fajitas

1 lb chicken breast, boneless, skinless, chopped
1 medium red onion, chopped
5 cloves garlic, minced
5 peppers, serano, minced
4 peppers, anaheim, minced
2 peppers, jalepeno, minced
2 bell peppers, sliced
2 cups white wine
4 tblsp olive oil
1/4 cup cumin powder
4 medium tomatoes, quartered
12 flour tortillas
1 tsp salt
1 tsp black pepper, fresh ground
2 tbsp dried cilantro
2 tbsp dried oregano
2 tbsp dried basil

Recipe Directions for Chicken Fajitas

  1. heat oil in frying pan

  2. brown chicken

  3. add in all veggies

  4. add spices

  5. add wine

  6. cover and simmer for 20 minutes

  7. stir occasionally

  8. uncover and simmer/reduce till liquid is almost gone

  9. serve with hot tortillas
