Chicken Fajitas Recipe

A light fresh meal. Can serve with side or rice or veggie, just eat alone.

Recipe Ingredients for Chicken Fajitas

2 boneless, skinless chicken breast
1 cooking oil spray
1/4 cup lime juice
1 clove garlic, minced
1/4 tsp black pepper
1/2 red bell pepper
1/2 green bell pepper
1/2 yellow bell pepper
1/2 yellow onion
4 flour tortillas, low fat
2 tbsp chopped fresh cilantro

Recipe Directions for Chicken Fajitas

  1. Combine fresh lime juice, minced garlic in a bowl. Add chicken breasts that have been lightly pounded to tenderize. Coat breast with the juice mixture, cover and refrigerate for about an hour.

  2. Spray nonstick skillet with cooking oil spray and heat over medium high heat. Remove chicken from marinade (discard marinade). Add chicken to skillet and saute about 3-5 minutes per side or untill cooked through. Remove chicken from skillet. Add more cooking spray if needed. Add onions and stir fry for 2-3 minutes, add peppers and continue to stir untill lightly crisp and tender. Cut chicken into strips. Cover vegetable and chicken to keep warm. Sprinkle with chopped cilantro. divide amoung to plates / 4 wraps.
