Use leftover chicken from WalMart Rotisserie Chicken. Dress with additional salsa, guacamole, and shredded mexican blend cheese (Weight Watchers, Fat Free)

Recipe Ingredients for Chicken Fajitas

11 oz chopped chicken, cooked
1 yellow pepper, chopped
1 green pepper, chopped
1 large onion, chopped
3 Roma tomatoes, chopped
1/4 cup salsa
3 tablespoons extra virgin olive oil
4 tablespoons fajita seasoning

Recipe Directions for Chicken Fajitas

  1. Saute onion, peppers and tomatoes in olive oil. Use 1 tablespoon of fajita seasoning during this process.

  2. Add chicken and salsa to vegetable with remaing fajita seasoning.

  3. Cook on high heat until you're happy with it.
