A healthy mexican style Chicken Fajitas in a spicy tomato sauce

Recipe Ingredients for Chicken Fajita's (healthy)

2 tbsp olive oil
1 green bell pepper
1 large onion
3 cloves of garlic
400 g chicken breast
1/2 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon cumin powder
1/2 teaspoon chili powder
2 tablespoons lemon juice
1 (200g) chopped tomatoes
100 g tomato puree
60 ml beef stock
8 tortilla
400 g lettuce

Recipe Directions for Chicken Fajita's (healthy)

  1. Cut the chicken into 1/2" strips. Mix the salt, black pepper, cumin and chili powder in a bowl with the lemon juice.

  2. Add the chicken and stir to coat well in mixture. Place in fridge for at least 1 hr.

  3. Chop the green pepper into strips and throw away the seeds. Add one tbsp of oil to a griddle pan or wok. Heat to medium/high and fry the pepper for aprox 3-4 minutes until the edges turn brown. Remove with a slotted spoon.

  4. Add the second tbsp of oil and heat to medium/high. Then toss in the chicken and fry at a high heat until the chicken is cooked through (3-5 mins) Dont worry if the chicken turns slightly brown as this chargrill adds to the flavour. If the pan/wok is small cook the chicken in batches. Remove the chicken with a slotted spoon.

  5. Slice (or chop) the onion. Peel and chop the garlic. Heat the remaining oil to medium and fry the onion for 3mins. Then add the garlic and fry for a further 2 minutes. Then add the chicken and peppers and heat for approx 2 minutes. Now add the chopped tomatoes, tomato puree and beef stock and cook for a further 3-4 minutes at a med/high heat stirring continuosly.

  6. When finished serve with warm tortillas and lettuce
