A delicious recipe I picked up from my brother-in-law and personalized a little for better nutrition.

Recipe Ingredients for Chicken Fajita Taquitos

2 tablespoons of Chicken Fajita Seasoning
1 Boneless, Skinless Chicken Breast
184 grams Flour Tortilla Shells
1/2 cup of Shredded Mexican Cheese
1/2 cup of Salsa
1/4 cup of diced Cilantro

Recipe Directions for Chicken Fajita Taquitos

  1. Boil chicken breast in a pot of water for 25 minutes or until there is no pink left in middle.

  2. Shred chicken and mix with Fajita Seasoning in a medium skillet over medium to medium-high heat constantly stirrig for around 2-5 minutes.

  3. Sprinkle cheese onto the tortilla shells and place shredded chicken on top.

  4. Roll shells up and place in skillet on medium-high heat for 45 seconds, turn and heat for another 45 seconds or until brown and cheese is melted inside.

  5. Once on plate, pour salsa over the top of the Taquitos and sprinkle with the Cilantro.

  6. **For a little less healthy (and not following the caloric intake mentioned), you can also add Guacamole and Sour Cream on top or Feta Cheese is delicious as well.**
