Recipe Ingredients for Chicken Fajita Salad

4 oz Boneless Chicken Breasts
1 large (2-1/4 per lb, approx 3-3/4" long, 3" dia) Peppers, Sweet, Red
1 medium (2-1/2" dia) Onions
5 leaf outer Lettuce, Cos Or Romaine
2 tbsp Sliced Olives
0.25 cup, sliced Peppers, Jalapeno
2 tbsp Sauce, Ready-to-serve, Salsa
1 serving 2% Milk Reduced Fat Mild Cheddar
2 tbsp Reduced Fat Sour Cream
1 1tsp Olive Oil
1 serving Ground Cumin

Recipe Directions for Chicken Fajita Salad

  1. Cut chicken into bite size pieces and season with black pepper, garlic powder, cumin and ground cayenne pepper. Spray pan with non-stick spray and cook chicken over medium heat. Slice red pepper and onion and add to pan. Cook until meat is done and veggies are tender.

  2. Add to bed of romaine lettuce and top with cheese, sour cream, salsa, jalepenos and olives.
