2 chicken Fajitas - take out the cheese and avocado garnish to make it less of a treat and fewer calories (you can take off 200 calories).

Recipe Ingredients for Chicken Fajita

170 g tortilla
30 g mushroom
1 bell pepper
40 g avocado
2 small tomato
1/2 onion
1 tbsp olive oil
60 g chicken
1 oz cheddar cheese

Recipe Directions for Chicken Fajita

  1. stir fry chicken with mexican spices in 1 tbspn olive oil.

  2. Remove from the pan then stir fry onion, pepper and mushroom with no more oil

  3. Add the chicken again when vegetables are cooked but still crisp.

  4. blend avocado with small amount of onion, 1 tomato, clove of garlic and lime juice

  5. make up fajitas with the hot mixture, avocado sauce and garnish with chopped tomato and the cheese.
