From the Delicious Quick-Trim Diet Simple Chicken dish. Nothing special, but more flavourful than plain chicken.

Recipe Ingredients for Chicken Espagnole

5 breast, bone and skin removed Chicken, Breast, Meat Only
1 oz Sherry
1 cup Organics Organic Tomato Sauce

Recipe Directions for Chicken Espagnole

Spread 2 tablespoons tomato sauce in baking dish. Add chicken breast, sprinkle with sherry and a pinch of thyme. Add remaining tomato sauce. Cover with foil and bake at 350 for 20 minutes. Uncover and bake for an additional 20 minutes.
