Chicken Escarole Recipe

Recipe Ingredients for Chicken Escarole

1 head Escarole
1 head Escarole
7 cloves garlic, minced
14 oz low fat low sodium chicken broth
1 cup wild rice
30 oz white cannellini beans, drained
1/2 cup sundried tomatoes, sliced
1/2 tsp parsley flakes
1/4 tsp red pepper flakes
4 tbsp Olive Oil
2 chicken breast, grilled

Recipe Directions for Chicken Escarole

  1. Cook wild rice according to directions

  2. Halve chicken breasts. Sprinkle chicken breast with small amount of salt, pepper, and garlic powder. Grill until done, set aside.

  3. Clean and cut escarole into small pieces

  4. heat 2 tbsp olive oil in large sautee pan, and sautee some garlic with the red pepper flakes. When garlic is fragarant, add escarole and cook until wilted (about 3 mins)

  5. Remove from pan, set aside

  6. In same pan add 2 tbsp remaining oil and the rest of the garlic. Sautee until fragarant. Slowly add the entire can of chicken broth, let boil and reduce about 1/2 way.

  7. Drain and rinse beans lightly, then add to the chicken broth and cook approximately 5 minutes.

  8. Add the parsley flakes and stir.

  9. Stir in escarole and taste - add seasoning if needed (garlic powder, ground black pepper)

  10. Place rice in a plate, top with a piece of chicken then the bean mixture. Enjoy!
