Recipe Ingredients for chicken enchilladas

60 grams Plain Flour Tortillas
2 thigh, bone and skin removed Chicken, Thigh, Meat Only
1/2 can Beans
200 grams Passata Italian Sauce
2 clove Garlic
1/2 medium (2-1/2" dia) Onions
15 grams Fajita Spice Mix
10 grams Chilli

Recipe Directions for chicken enchilladas

  1. cook onions, garlic in water in a pan and then add chicken. brown.

  2. add pasatta, spice mix, chilli and kidney beans and simmer until chicken is cooked and beans are tender.

  3. fill the tortillas and place in baking dish. sprinkle with cheese and bake for 10-15 mins.

  4. tops with mashed avocado and serve.
