Shredded chicken - make into individual enchilladas or layer for a casserole.

Recipe Ingredients for Chicken Enchillada Casserole

2 chicken breast, skinless
16 oz. tomato sauce
8 oz. chilis
8 oz. chopped black olives
2 tsp. cumin
2 cloves garlic
10 corn tortillas
1/3 cup canola oil
1/3 cup flour
1/4 cup chili powder
16 oz. water
2 cups shredded cheese

Recipe Directions for Chicken Enchillada Casserole

  1. Poach chicken with celery, carrots, onion, garlic and bay leaves. Shred chicken once cooled (discard everything else).

  2. Mix chicken iwth chilis, black olives, cumin and garlic cloves (minced).

  3. make roux with oil, flour and chili powder, then add water (this is the sauce).

  4. Assemble enchiladas or layer in baking dish and bake in 375 degree oven until bubbly and cheese is melted and browned.
