Chicken enchiladas with a jalapeno/sour cream sauce...2 enchiladas per serving.

Recipe Ingredients for Chicken Enchiliadas Verdes

2 cups shredded roasted chicken, meat only
2 tbsp extra virgin olive oil
12 corn tortillas
2 cups shredded Monterey Jack cheese
1/2 cup chopped onion
1/4 cup butter
1/4 cup flour
2 cups chicken broth
2 oz jalapenos
1 cup light sour cream

Recipe Directions for Chicken Enchiliadas Verdes

  1. Fry torillas in oil for 10 sec or until limp. Drain on paper towel. Saute onion. Place about 2 tbsp cheese, 1 tbsp onion, and 1 tbsp chicken on each tortilla and roll up. Place seam down in a baking dish.

  2. Melt butter. Blend in flour. Add broth and cook and stir until thick and bubbly. Add sour cream and peppers to sauce. Heat, do not boil. Pour over tortillas.

  3. Bake at 425 degrees for 20 minutes. Top with remaining cheese and melt.
