Chicken Enchiladas in a red sauce

Recipe Ingredients for Chicken Enchilads

13 oz chicken breast, canned
19 oz enchilada sauce, canned
16 oz refried beans, canned
1 onion, chopped
2 cups cheese, shredded
8 Fat Free Tortillas
1 cup sour cream

Recipe Directions for Chicken Enchilads

  1. Mix chicken, onion, 1/2 the cheese, and half the enchilada sauce in a bowl. Take a tortilla and spread it with 1-2 tablespoons of refried beans. Spoon 1/2 to 3/4 cup of chicken mixture on tortilla and roll up tortilla.

  2. Place in a greased baking dish and pour remaining enchilada sauce over the tortillas. Spread with remaining cheese and bake for 30 minutes at 350 degrees
