A sweet alternative to a spicy enchilada~great for kiddos!

Recipe Ingredients for Chicken Enchilada's without the spice

6 Tortilla
1 cup Mango Peach Salsa
1 tbs Cilantro
2 tsp extra virgin olive oil
2 oz skinless
1/4 cup shredded mozzarella cheese
1/4 cup shredded cheddar cheese
1 oz Pepper Jack Cheese

Recipe Directions for Chicken Enchilada's without the spice

Oven set to 400. Grease a long, medium depth pan with a tsp evoo. Lay 3 Tortilla's on the bottom of the pan, then lay the shredded chicken (boneless, skinless & all fat/cartilage removed-shredded with a fork) on top of the Tortilla's. Add doll-ups of the Mango Peach Salsa (Whole Foods Brand is superb!), then sprinkle with the cheeses, Sprinkle Cilantro & place the remaining Tortilla's on top. Lightly spread 1 tsp evoo on the tops. Bake for 15-20 minutes w/ cover (aluminum foil), then 5 min uncovered. Serve w/ Sour Cream.
