Enchiladas with a creamy sauce with salsa verde

Recipe Ingredients for Chicken Enchiladas Verde

1 breast, bone and skin removed Chicken, Breast, Meat Only
16 oz Verde Salsa
4 serving, raw Cilantro
0.8 package (10 oz) yields Corn, Sweet, Yellow
9 tortillas Old El Paso Flour Tortillas for Soft Tacos
2 cup Mexican 4 Cheese
2 thigh, bone and skin removed Chicken, Thigh, Meat Only

Recipe Directions for Chicken Enchiladas Verde

  1. Cook and shred chicken.

  2. Combine in food processor 1/2 C sour cream, 16 oz of salsa and cilantro. Pour into saucepan and simmer until thickened (about 15 minutes).

  3. Combine chicken, 1 C cheese, corn and 1 C sauce. Pour 1 C sauce in bottom of 9x13 pan. Fill 9 quesadillas with chicken mixtre, roll up and place seam side down in pan. Top with remaining sauce and cheese. Bake at 400 for about 20 minutes
