Recipe Ingredients for Chicken Enchiladas Verde - low carb!

7 serving La Tortilla Low Carb High Fiber Tortillas - Garlic Herb

Recipe Directions for Chicken Enchiladas Verde - low carb!

  1. Use Low Carb/High Fiber tortillas.

  2. Take an oven tray and spray lightly with olive oil spray, then line out your 7 tortillas like open tacos side by side.

  3. Fill each taco with a spoonfull or two of blackbeans

  4. Sprinkle a bit of low fat grated cheese (your fav kind) into each taco

  5. Add the shredded chicken breast (I just buy a chicken from Central Market pre baked and pull off all the white meat to save time)

  6. Add salsa (I don't like spicy so I use Pace Picante MILD.) - enough to cover the chicken

  7. Add some corn/chopped onions

  8. Add another round of sprinkled chease (just a little bit to make the enchiladas stick together when they bake!)

  9. Wrap up the tortillas until they look like little burritoes.

  10. Spread your Tomatillo sauce on top - you can usually cheat and purchase this at Whole Foods or Central Market it's delish :)

  11. Sprinkle a little more cheese all over the top - that way you can see it melt and know when your enchiladas are done!

  12. Put in the oven at 350 for ~15min
