Roasted, shredded chicken enchiladas. Makes 6-7 enchiladas

Recipe Ingredients for Chicken Enchiladas for Two

10 oz Chicken, Breast, Meat Only
6 tortillas 6" White Corn Tortillas 30ct
1/2 cup Corn, Sweet, Yellow
2 tbsp Olive Oil
1 small Onions
14 oz Old El Paso Sauce Enchilada Mild
1.5 cup, shredded Monterey Cheese
8 oz Green Chiles
2 cloves, raw Garlic
1 tsp Cumin
1 tsp Chili Powder
1 serving, raw Cilantro

Recipe Directions for Chicken Enchiladas for Two

  1. Heat oil in pan and saute onions in hot oil until soft, browned

  2. Add garlic, chili and cumin. Cook for 30 seconds

  3. Off heat add all remaining ingredients, plus 1 cup of the enchilada sauce, 1/2 the cheese and mix well

  4. Fill warmed tortillas with mixture, roll tightly and place in lightly greased baking pan

  5. Pour remaining sauce on top and sprinkle with remaining cheese

  6. Cover and bake for 10 minutes at 450

  7. Remove foil and bake another 10 minutes

  8. Serve
