Recipe Ingredients for Chicken Enchiladas with Salsa Verde

1 cup, chopped Onions
9 grams Garlic
7 oz Salsa Verde
12 oz (raw) Chicken
4 oz Fat Free Cream Cheese
6 tortilla La Banderita Low Carb
1 serving, raw Cilantro
1/4 cup, shredded Mexican, Queso Chihuahua Cheese
1 tsp Chili Powder

Recipe Directions for Chicken Enchiladas with Salsa Verde

  1. Chop onions and place in blender. Mince garlic gloves into blender. Chop cilantro and place in blender. Add 7 oz of salsa verde and blend until smooth.

  2. Boil chicken with Mrs. Dash's chipotle seasoning. When cooked, shred chicken. Add softened fat free cream cheese to shredded chicken. Mix well. Add 1/3 cup of salsa mix, set the rest to the side. Steam tortillas until soft and pliable. Lay flat and add chicken mixture down the middle. Spread to the sides and roll up. Place in baking dish. Top rolled tortillas with remaining salsa mixture. Crumble queso on top of dish. Sprinkle chili powder on top. Cook for 18 minutes in 425 degree oven.
